Peppermint Truffles



There's really only one word to accurately describe these candies...

  P  E  R  F  E  C  T 

Little pieces of cold, creamy chocolate...with crunchy, sweet mint candy covering it all...
....yuuuummmmm.....

Peppermint Truffles

Ingredients:
  • 1 cup cream
  • 1/2 stick butter
  • 1 lb. chopped chocolate
  • 1 teaspoon vanilla
  • about three cups of crushed peppermint candies, chopped nuts or cocoa powder...really any topping you would like!

 Bring cream and butter to a boil in a saucepan; pour over chopped chocolate in a bowl. When melted, add vanilla and stir until smooth. Chill until firm.
Scoop with a spoon and roll into balls, then roll in crushed peppermint candies, or desired topping. Chill until set.

Pinwheels, and Turkey, and Pie - Oh My!

'Ello, my dears!

How was your Thanksgiving? 
Ours was truly great - the day was beautiful, the food was amazing, and the fellowship was definitely sweet! Along with our troop of seven =), we had extended family over for the celebration! We talked, and ate and ate some more, leaving the table thoroughly stuffed with both food and fun! 




On the menu this year:

Hors d'ourves:
  • Parmesan Artichoke Spinach Dip with toasted baguettes
  • Crudite platter of Roasted Red Peppers, Marinated Mozzarella, Olives and fresh veggies with ranch dip.
  • Sausage Pinwheels 
  • Stuffed Mushrooms
  • Pimento Cheese Ball (we live in the South, after all! =)




 Dinner:
  • Mom's *always-gorgeous* turkey
  • Sweet and Spicy Cranberry Sauce
  • Buttery Potatoes
  • Sausage Stuffing 
  • Green Salad with a Sweet Ginger Dressing
  •  Green Bean Casserole with freshly snapped green beans
  • Sweet Potatoes
  • Jello Salad
  • Homemade Butter Rolls




Dessert:
  • Maple Pumpkin Pie with a walnut-sugar streusel topping
  • Apple Crumble Pie
  • Haystack cookies
  • coffee
  • and - of course - the traditional can of whipped cream...which was used extensively, was gone VERY quickly...=)







I hope your holiday was as wonderful as ours was!

Oodles of Noodles!

It was noodle making day here at our house...


and almost everyone got involved! =)





My nephews, Eli and Caleb, cranking the dough through the noodle press. =)





While you are supposed to let these dry for three days, 
they are *super yummy* boiled up fresh! 


Simply toss in some butter, salt and pepper, and you have yourself a great dish!


 Just make sure you only boil for less than a minute, as the soft dough will overcook very easily. When dried, you can cook them as you would store bought noodles - probably a few minutes until desired tenderness.






Homemade Noodles
Recipe from the Homesteading for Beginners Volume 3 DVD 
by the Harrison Family from the Homestead Store





Ingredients:

  • 2 cups egg yolks
  • 1 cup egg whites
  • 1 cup boiling water
  • 3.5 pounds of your choice of flour 


Mix yolks, whites and boiling water. Add all the flour. This mixture will be very dry and crumbly. Cover and let set for 30 minutes. Knead with your hands until it is nice and smooth. This will take very little kneading. 

Put the dough through a noodle press. 


Each time you run the dough through, make the setting smaller so the dough gets thinner and longer. 





Place your strips of dough over a drying rack while you send the rest through. 




If you do not have a noodle press, roll out the dough really thin and cut with a pizza cutter.

Do not let the dough get too dry or it will crumble when you send it through the press again. 

Dry the noodles for 3 days on a clean sheet. 




Pack into airtight containers and store them in your pantry. 
These noodles last for a long time.

First Post!

Hi everyone, and welcome to The Many Adventures of the Homemaking Intern

My name is Shannon, and I am a book wormy, Pride and Prejudice loving, knitting, football watching, baking like crazy, compulsively crafting, head in the clouds gal who has a strong desire to learn and live life to the fullest. 

I am a homeschool graduate, 
studying web design and herbalism at home

and learning under my sweet Mom 

everything

I didn't have time to learn during my high school years...and believe me, there wasn't a ton of time between trying to get through that mountain of school...=) 



From honing in my cooking skills, 
gardening our third acre hobby farm, 
and taking care of chickens



 to baking keifer bread, sewing, and learning herbalism together, 
Mom and I are going to be covering it all and have fun while doing it! 






This blog is going to be a journalism of my journey of learning those skills and so many more that go along with the best, 
hardest, 
 and most important  
career there ever was, is, and ever will be: 

being a Homemaker.
 

My Mom is the best example God could have given me , and I am so thankful and excited to get to learn under her during these years at home! 
Also, I am excited to get to share my journey with you all! =D
